Yesterday we showed you how to make jiffy cornbread in the air fryer and today is the turn of using the SAME cornbread batter and to use it to make muffins instead of a cake.

If you have not transformed cornbread to corn muffins before then think of it like this.

In the movie The Help the maid is talking to the lady of the house and the lady has never had cornbread. She simply says it is just like a cake.

Well, you can transform any cake recipe into a mini version by not changing a thing, just changing what you cook your cornbread in and what cook time you do.

Sorry to say that a box mix of Jiffy Cornbread mix is not a healthy option. Though of course, it’s a Thanksgiving treat, and we all deserve a treat, right?

Yes, you can bake muffins in an air fryer, and you will find them to be easy to make and delicious to eat.

Our favourites so far are our blueberry muffins we mentioned above, our ninja foodi muffins made with strawberries, reusing a basic muffin to turn them into butterfly buns and best of all, making air fryer cupcakes.

Can You Use Paper Muffin Cups In An Air Fryer?

No, you can’t use paper liners in the air fryer in the same way you would use them in the oven.

You need to do it slightly different. Instead of paper muffin cups directly into the air fryer basket, you need to put your paper muffin cups into a sturdy container. Otherwise they will blow around in the air fryer basket.

So, this could be in some stainless steel Yorkshire pudding containers or something else you use for baking.

Or the easier option (what we do) is buy some silicone muffin cups for the air fryer and load the corn muffin mix into these and they will air fry perfectly. (these are the silicone muffin cups we recommend you buy)

How To Make Corn Muffins Moist?

No surprise that I am telling you the best way to make corn muffins moist is to use the air fryer. I love the air fryer and not only do you save on electric because you don’t need a preheat, but because of the way the air circulates it creates the most moist muffins ever.

Now what might surprise you is the ingredients you will find in this jiffy mix corn muffin recipe.

There is nothing fancy here and it’s the EXACT same ingredients that are in our jiffy cornbread recipe. All we are doing is using our air fryer silicone muffin cups instead of a large silicone cake pan.

You can do this with anything you want. Not only can you cook cornbread muffins in the air fryer, but you can do this same thing with other air fryer box mixes or even homemade recipes.

Corn Muffin Recipe Ingredients

Box – Lets start with your Jiffy cornbread mix. We used one small box (8.5 ounces) to make a good quantity of jiffy muffins.

Eggs – For each box of Jiffy Cornbread Mix you will need 1 large egg. Though of course if making a lot you can do a double batch.

Milk – You will also need 1/3 of a cup of milk to add to your jiffy cornbread recipe. This helps keep your jiffy muffins moist.

How To Make Corn Muffins?

  • Mix. Into a bowl add your corn muffin mix along with an egg and your milk. Mix well with a hand mixer until you have smooth jiffy muffin batter.
  • Load. Then load your batter into silicone cups and then place into the air fryer.
  • Cook. Air fry your air fryer cornbread muffins for 12 minutes at 180c/360f or until a co*cktail stick comes out clean.
  • Cool. Allow to cool and then serve.

And I am sure you can see now how easy it is to make corn muffins with jiffy mix and how you can be doing the same.

How To Tell When Muffins Are Done?

The best way to tell that muffins are done is to use a co*cktail stick. Simply place a co*cktail stick into the middle of your air fryer corn muffins and if a co*cktail stick comes out clean you know they are done.

Small Batch Cornbread Muffins

This air fryer cornbread muffins makes 8 good sized muffins from Jiffy cornbread mix.

Now let’s say you only want 4 of them. Simply follow our recipe but divide in into two. Swap 1 large egg for 1 small egg, and then use half the milk.

You then have a small batch of cornbread muffins ready for cooking in the air fryer.

Sweet Jiffy Corn Muffins

Would you like a corn muffin mix recipe that is sweeter? Then what you can do is add into the mix 2tbsp of maple syrup and 2Tsp of pumpkin spice. Then reduce the milk by a third so that the wet ingredients are still correct.

You then have sweet jiffy corn muffins.

Notes

Cooling. If you are worried that your cornbread muffins needs a little longer, leave it in the air fryer after it beeps and then it will finish cooking and then remove an hour later. This method is also good for keeping your muffins warm.
