“Great recipe! Like others, I also added some spice (vanilla, cinnimon, ginger, nutmeg and allspice). I wanted to make muffins, so I put the batter into a muffin tin sprayed lightly with Pam. At 325 degrees they were done in about 25 minutes! The batter yeilded 12 good sized muffins that were moist and delicious! Definitely a keeper.”

One more user by the name of PhatCatBiggs also rated the recipe 5 stars and wrote,

“Excellent recipe!! I added 1/2 cup of chopped walnuts and brushed the top with a mixture of 1tbs water and 3 tbs brown sugar for a sweet crunch on top.”

FAQs

Why are older bananas better for banana bread? ›

Ripe bananas are not only softer and easier to mash and blend into a batter, but they are also sweeter, which is why baking recipes specifically call for ripe bananas in ingredient lists. As the bananas ripen, the fruit converts starches to sugars, making them sweeter and more flavorful.

When not to use bananas for bread? ›

If black bananas are spotted with mold, then it's time to step away! You absolutely should not use them for banana bread or consume them at all. At that point, it's wise to consign them to the trash can or compost.

Are my bananas ripe enough for banana bread? ›

right/bottom ~ A banana must be really ripe — nearly all brown and even, if you want, well into "black" — to yield luscious banana flavor in banana bread, banana cake and banana cookies.

Why does banana sink in banana bread? ›

Bananas vary in size and this impacts their moisture content. 3 large bananas have more moisture than 3 small/medium-sized bananas. Excess moisture (when compared to the recipe's dry ingredients) means a greater potential for banana bread to sink in the middle.

How many days old should bananas be for banana bread? ›

Let the bananas ripen (and overripen) at room temperature. Depending on the weather, this could take a few days, or up to a week. The best bananas for banana bread aren't yellow; they're black. Or they're at least streaked with black/brown, with just the barest hint of green at the stem.

Why does banana bread have to sit overnight? ›

Once a loaf of banana bread is fully baked and taken out of the oven, it's crucial to allow it to fully cool. Banana bread retains heat, especially in the center of the loaf. If the loaf is still warm once it's wrapped for storage, condensation can form, which can lead to mold.

Should you leave banana bread out overnight? ›

The best way to store banana bread is at room temperature in an airtight container. Though it will only stay fresh for about four days on the counter, this will keep your banana bread tasting the freshest.

Why does my banana bread not taste good? ›

You Use Underripe Bananas

If you've ever tried to mash green bananas, you know that's no fun. That's why you should use only very ripe bananas to make banana bread. Not only are overripe bananas easier to mash, they also give the bread more moisture, sweetness, and flavor.

Can bananas be too far gone for banana bread? ›

Key takeaway: As long as your bananas aren't starting to get moldy, infested with fruit flies or beginning to rot they aren't too ripe for baking banana bread.

Can dogs eat bananas? ›

Bananas are safe for dogs, but moderation is key. Bananas are high in sugar, so too much of it can put your dog at risk of developing medical conditions. You should give your dog only a few thin slices of banana once in a while. At least 90% of your dog's food should be regular dog food.

What temperature should banana bread be cooked at? ›

When the center of your bread is baked through a thermometer will register between 200°F and 205°F. No part of your loaf should be below 200°F — except perhaps the very top, which may produce an unreliable reading due to the thermometer's tip being partially exposed to room-temperature air.

Why is my banana bread always mushy? ›

Using a lot of bananas adds excess moisture, and there are two ways to get rid of it. You could either add more flour or increase the baking time. Add a tablespoon of extra flour at a time into the batter and give it a good whisk until its consistency starts to look right: thick but runny enough to fall off a spoon.

What if I add too much baking soda to banana bread? ›

Increase the Quantity for an Easy Fix

If you know how much extra you added, just increase the other ingredients in the recipe to match the amount of baking soda or baking powder that you used.

Why are older bananas better for you? ›

“Very ripe and overripe bananas are rich in flavor and antioxidants, which can help benefit our immune systems,” says Gabriel. “They also take less time to digest, which can be beneficial, depending on the person.” This phase is also where bananas become just right for adding sweetness and heft to smoothies and shakes.

Why do overripe bananas taste better? ›

From starch to sugar

According to a research article published in the Global Journal of Nutrition & Food Science in 2022, this starch-to-sugar conversion is responsible for softening the fruit and increasing its sweetness as it ripens.

Why are old bananas sweeter? ›

The reason bananas get sweeter as they ripen is that their starch is broken down into sugar. When your body has to break down the starch itself (as it does when you eat a green banana), your blood sugar rises more slowly.

Can you microwave bananas to ripen them? ›

The microwave can soften a too-hard banana, but it doesn't accelerate the ripening process—the conversion from starches to sugars—the way an oven does because an oven uses consistent, dry heat. Microwaves heat bananas too fast for ripening to take place.
