I should probably explain this Sweet Potato Nachos concept in all it’s glory so you can fully grasp the divine concept that it is. Here’s what you need to know: Sweet potatoes are peeled, cut into fries and tossed with olive oil and taco seasoning. They are baked in a hot oven until they are sweet, slightly crunchy and southwesty. Then my friends, you top the hot fries with cheese and let it melt. Oh mama are these good on their own. BUT, it gets better. I then topped mine with sour cream, salsa, fresh tomatoes, jalapenos, onion and cilantro.

Sweet Potato Nachos | Perfect Party Food

Are you getting excited for the Super Bowl? Me neither. Well, I sort of am but mostly just for the food BECAUSE!!!! I made this ridiculous dish and it was over the top tasty. Before we get to far let me address something: I know what you’re thinking because I thought the same thing. “Sweet potatoes? and nachos mixed together? Really? Isn’t that kind of gross?”

I am here to proclaim that NO! They are not gross! They are strangely delicious and addicting! The sweetness of the sweet potato goes so well with the creamy sour cream, the spicy onion and jalapeno, the cold salsa and the tart lime juice. And, if you don’t go overboard with the cheese, they might even pass as one of the healthier dishes at your Super Bowl buffet table thanks to the fresh toppings and the olive-oil-oven-bake-method. That’s a real word.

Main Ingredients Needed

I tested this recipe last night as a late afternoon snack/early dinner. Between Gordon and I, we absolutely and positively licked the plate clean. We weren’t even that hungry, but they got completely finished. Here is what you’ll need to make the nachos, plus topping ideas:

  • Sweet potatoes– I used 4 medium or 2 large sweet potatoes.
  • Olive oil + taco seasoning– toss with the potatoes.
  • Cheddar cheese–grated.

  • Fresh jalapeno
  • Tomatoes
  • Sour cream
  • Salsa
  • Onions
  • Cilantro
  • Avocado
  • Corn
  • Beans
  • Lime wedges

How To Make Sweet Potato Nachos | Directions

Step 1: Prep

Heat oven. Lightly grease baking sheet with non stick cooking spray. Set aside.

Step 2: Peel + Cut + Place On Baking Sheet

Peel sweet potatoes and cut into fries. {I cut mine into 1/4 inch pieces approximately.} Place on baking sheet and toss with olive oil and taco seasonings. *Bake for 45-60 minutes or until fries are to your desired crispness, flipping them every 10-15 minutes.

Step 3: Remove From Oven + Sprinkle With Cheese

Remove fries from oven and sprinkle cheese over top. Place back into hot oven for 30 seconds or until cheese has melted completely. Remove fries carefully from baking sheet onto serving platter and top with desired toppings. Serve warm.

Baking time will depend on the thickness of your fries, so adjust accordingly! 🙂

Reheating + Storing Leftovers

Like most fries, leftovers are never ideal. But, to crisp up the fries, heat the sweet potato slices in a frying pan until hot and crispy. To store, place in an airtight container in the fridge for 3-4 days.

A healthy twist on Nacho Fries uses sweet potatoes underneath colorful toppings for an appetizer that could be a meal all by itself!
